This sugar is derived by the process of evaporated sweet nectar of sugar blossoms that grow at the top of coconut tree. It is used as a replacement for normal cane sugar and is naturally low on the glycemic index (GI rated at 35) in comparison cane sugar has GI 68. Coconut palm sugar has also a high nutritional content which is richer than any other commercially available sweeter.
Besides it has the following advantages.
